Same thing as:
You dont know what youve got til its gone.

Until the person has left your life … you dont know what an impact they have had on it.
Like a meteor hitting the Earth. Once the ‘big rock’ is removed… you see what a dent that it made.

Seriously, I think it means that you don’t really know how much you love someone until they are no longer with you (i.e. separated from you).
