Which is the best book on the practice of Zen Buddhism?
I would like a very in depth book on how one would follow/practice the zen belief...I would prefer one which is not written by a western trendy :o)

Try 'The way of Zen' by Alan W Watts it is written in a western style also 'Zen and reality' by Robert Powell

The best available book on the practice of Zen Buddhism - meditation and other techniques - is:
"Taking the Path of Zen" by Robert Aitken Roshi
Aitken Roshi is a senior Western teacher (he's in his 90s) and was the first Westerner to be authorized as a Zen master. This book provides a clear guide to many aspects of Zen training.
There are two other books that have had a great deal of influence on the development of Zen in the West:
"Zen Mind, Beginner's Mind" by Shunryu Suzuki Roshi
This book has more influence on the development of Buddhism in the West than any other. It's a classic.
"Dropping Ashes on the Buddha" by Zen Master Seung Sahn
This is the other classic book on Zen. It gives a great view into the creativity and spontaneity that arises from Zen practice.
None of these books is written by a "trendy" or "enthusiast" - each of the authors is a recognized master in the Zen tradition.
Of course, Zen is primarily a practice tradition. Reading about Zen can inspire us in many ways, but the real fruits of Zen appear through our own efforts in meditation. This video provides a charming and clear guide to Zen meditation - worth your time to watch:

For a beginner: "Zen Keys" by Zen Master Thich Nhat Hanh and "Three Pillars of Zen" by Roshi P. Kapleau are good books.
Anything by Thich Nhat Hanh is very good.

Is essential reading & the first book really introducing Zen to the Western Mind, in its original cultural milieu.
I'd also recommend anything by Professor D. T. Suzuki. The man who, as an Enlightened Buddha, brought Zen West almost single-handedly.
